These brownie pops are such an easy and fun way to celebrate St. Patrick’s Day! You start out with a fudgy brownie mix. (I know…I know. Some of you shudder at the thought of using a prepared mix, but there are times…many times…that I find mixes to be perfectly fine. And this is one of those times.) Anyway, you bake the brownies according to the package directions. After they cool, you cut off the crusty edges and cut the brownies into 24 squares. You then roll the brownie into a ball and insert the popsicle stick. They are dipped, first, into melted dark chocolate and, when that dries, they are dipped again into melted white chocolate, which I tinted green. The complete and easy-to-follow directions are here.
