My mom celebrated a great big birthday on Friday…her 85th!…and we gathered on Saturday for some party fun!

I brought along the cake and, (can I tell you?), it was sooooooo delicious!!  I regret not taking a photo after it was sliced, but let me tell you about it.

Truthfully, it tasted like one big Devil Dog 🙂  Inside were four layers of rich, moist chocolate cake, surrounded by soft and creamy buttercream frosting.  I avoided any fruity fillings because I knew it would be a deal-breaker for the kids, so I stuck to all buttercream.  I used two boxes of Duncan Hines Devils Food cake mix, but I mixed them individually and poured each into a prepared 10″ round cake pan.  After the cakes baked and cooled, I froze them to make it easier to slice each in half, and then I layered them with Rick’s Special Buttercream frosting. 

After the cake was completely frosted and decorated, I froze it (uncovered) overnight.  Freezing the cake enhances the texture and helps make it super moist.  I took it out of the freezer the next morning and we ate it later that evening.  No…it did not taste frozen…and nobody knew…they all just raved about how moist it was!

It was a such a great party; noisy, loud, and full of love and laughter.
