IMG_4759These muffins are sooooo good and sooooo easy to make!  Perfect with a hot cup of coffee on a soggy, foggy day (like today).

Mini Chip Muffins (yield: 12 – 15 muffins)

2 cups flour (all purpose)

1/3 cup white granulated sugar

1/3 cup brown sugar

2 tsp. baking powder

1/2 tsp. salt

2/3 cup milk

2 lightly beaten eggs

1 stick (1/2 cup) butter, melted and cooled

1 tsp. vanilla

1 cup mini chocolate chips

Coarse sugar for sprinkling, such as Sugar in the Raw

Preheat oven to 375 degrees.  Grease 12-muffin pan, or spray with cooking spray.  In a large bowl, whisk together the flour, white granulated sugar, brown sugar, baking powder and salt.  In a separate bowl, whisk together milk, eggs, melted butter, and vanilla, until blended.  Pour milk mixture into flour mixture, and gently fold together, being careful not to over-mix.  Stir in chips.  Spoon batter into muffin cups.  Sprinkle course sugar on top and bake for 10 – 13 minutes, or until toothpick inserted in center of muffin comes out clean. Cool in pan for 5 minutes before removing muffins to cooling rack.
