If you’ve been sticking with your New Year’s resolution to diet, exercise and avoid decadent sweets, then read no further.  These irresistible peanut butter cookies are sure to derail your efforts and lead you astray.  But, if you’re a bit like me and believe that there’s still plenty of time to whip into bathing-suit shape, then read on.  You’re in for a treat.

These cookies are soft on the inside and lightly crispy on the outside.  The mild peanut butter flavor, mixed with those crunchy nuts and chocolate morsels, makes it impossible hard to eat just one.

Here’s the recipe that my friend, Holly, shared:

 

Chunky Peanut Butter Chocolate Chip Cookies

Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 stick softened butter (8 tablespoons)
  • 1/2 cup creamy peanut butter
  • 1/2 cup sugar
  • 3/4 cup brown sugar , packed
  • 2 eggs
  • 1 tbsp . vanilla extract
  • 2 cups semi-sweet morsels
  • 1 cup dry roasted , unsalted peanuts, chopped

Instructions

  1. Preheat oven to 350 degrees.  In a medium bowl, combine flour, salt, baking soda and baking powder.  In a separate mixing bowl, cream together butter and peanut butter until smooth.  Add both sugars, and beat until fluffy.  Add eggs, one at a time, and mix until blended.  Blend in vanilla.
  2. Add in flour mixture and blend on low speed until combined.  Stir in peanuts and morsels by hand.  Using a 2" cookie scoop, place cookies onto ungreased baking sheets and bake for 13 - 15 minutes.  Let cookies set for a few minutes before removing to wire cooling rack.

    Just took the last batch of these out of the over. The first batch has had time to set and cool, and my taste tester says that they are delicious. However, I think that I might use one and one half cups of chocolate chips, and 3/4 cup of chopped peanuts next time. There just wasn’t enough batter to hold all of the chips & peanuts! Maybe I did something wrong?

    I don’t really think you did anything wrong, Sarah. These cookies are just chock-full of chips and nuts, and you have to stir it all together until the nuts and chips are evenly distributed. Cutting back on the chocolate chips and peanuts is a good idea if you feel like you need more batter. Hope you enjoyed these anyway!

    Update: I made this again, and the 2 cups of chips and 1 cup of chopped peanuts blended easily into the peanut butter mixture.
