IRISH SODA BREAD

Ingredients

  • 1/4 cup sugar
  • 1 stick butter
  • 1 egg
  • 3 cups flour
  • 1/2 tsp baking soda
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups buttermilk (or add 1 tbsp. lemon juice to regular milk)
  • 1 cup raisins (optional)
  • 1 tsp caraway seeds (optional)
  • 2 tablespoons melted butter mixed with 1/4 cup buttermilk, for brushing the loaf top while baking.

Instructions

  1. Heat oven to 350 degrees.

  2. Mix flour, baking soda, baking powder and salt in a medium bowl and set aside. Cream together butter and sugar. Add egg and mix until blended. Mix in buttermilk alternately with dry ingredients. Stir in raisins and caraway seeds.

  3. Pat dough with additional flour if dough is too wet, and shape into a circle. Place in a 9" round greased and floured pan. Cut an "x" across the top and brush the loaf with the melted butter/buttermilk. Bake at 350 degrees for 1 hour, brushing the top every 15 minutes or so.
