Big mistake.  I’m really a Dunkin’ Donuts kinda girl, but I stopped at Starbucks to try one of their “skinny” coffees (as if I really believe that).  Without any warning, the words “I’ll take a slice of  lemon pound cake” just flew out of my mouth.  Nothing “skinny” about that.  It was ever so moist, delightfully tart, and perfectly delicious.  I couldn’t stop thinking about it.  So, what now?  Do I make a weekly pilgrimage to Starbucks, or do I try to make my own, eat it all, and be done with this lemon pound cake thing.

I found this recipe on the internet.  Close…really close, but the Starbucks original had a bit more tang to it.  That’s not to say that this yummy pound cake will go uneaten.  No, no.  It’s very moist, has plenty of lemon flavor and goes extremely well with a steaming cup of non-Starbucks coffee.

I would definitely make this again, but I think I’d substitute fresh lemon juice for the lemon extract in the glaze.  Maybe that would give it an extra little zip!  Mmmmm….
