Rainbow cookies are deliciously moist and rich tri-color cookies that are  usually found at Italian bakeries.  They have an intense almond flavor and are held together with thin layers of either raspberry or apricot jam (or orange marmalade) and a layer of melted chocolate tops them off.

They are a fussy and time-consuming cookie to make, but truly worth the effort since one recipe yields dozens of delicious cookies.  The recipe that I’ve made here is one that I saw quite a while ago on an episode of Good Morning America.  The recipe calls for marzipan or almond paste; I used the almond paste.

Rainbow cookies are a tasty and festive addition to a “party perfect” cookie tray, and they look especially pretty when presented in those shiny little foil cups!
