IMG_8359WOW!!  Once you’ve had a taste of this caramel corn with roasted peanuts, you may never go back to the boxed version of the treat that we all grew up with and loved.  Although, looking back, I think what I really loved was the silly little prize inside.

Anyway…I haven’t eaten a box of Cracker Jack in years and, after discovering this recipe, I know there won’t be any need.  This popcorn is delightfully sweet, buttery and crunchy, and it isn’t too difficult to make.

Basically, you pop the kernels (or you can use a bag of microwave popcorn):

and then you cook the caramel coating in a saucepan before pouring it over the popped corn.  Add the peanuts, bake for an hour:

and munch until you can gain control of your hand to keep it from stuffing the whole batch into your mouth.

I found the recipe at Brown Eyed Baker, and there was no need to change a thing…perfectly delicioso.

Since baseball and Cracker Jack have forever been linked, there’s no better time than the World Series to give it a go.  You won’t regret it!

    This is SO much better then the Cracker Jax I remember! Yours is light and crispy, and doesn’t stick in my teeth like the old Cracker Jax, but still is packed with flavor. Now I just have to figure out how to stuff my face and knit at the same time. It’s one of those recipes I’m not sure I should thank you for.

      Oooooh….I knew you’d love it!! It lasted all of two days in my house…disappearing handful by handful by handful….. Trust me, you’ll master the “stuff ‘n stitch” in no time. My best advice, just eat it all (quickly) and be done with it. You’re welcome 😉
