Yes. It is 100 degrees outside and I’m still baking. (Isn’t EVERY baker inspired when the thermostat rises past 90 degrees??)
Well, if you love coconut like I love coconut, you’ll crank up your oven and give these macaroons a go. They are SO moist and delectable, and the finishing dip into melted chocolate puts them over the top. Delicious.
The recipe comes from Taste of Home. I made no changes to the recipe, except to dip the cooled macaroons into some melted semi-sweet chocolate. (Of note, I always add a tablespoon or two of shortening to the chocolate as it is melting. This helps keep it fluid, making it easier to work with, and it also adds a pretty shine!)
The summer heat won’t stop me from baking up some tasty treats. How about you?

You will love these, Carol. The recipe is very similar to yours, but the added flour and vanilla make them easier to form and they hold their shape better. The coffee is brewing 😉
