I ate WAY too many of these this past weekend, and I haven’t a single regret! These scones are moist and delicious, and the lemon glaze is so perfectly tangy that I plan on using it atop a lemon pound cake…very soon.
This Tyler Florence recipe, Blueberry Scones with Lemon Glaze, was on the food network website, and it is a keeper. I followed a suggestion made by a few reviewers and added a bit more heavy cream, which I think is responsible for the tender and moist crumb, and my frozen blueberries worked out just fine. I had enough dough to make 14 mini scones in the Nordic Mini Scone pan, and they were just the right size.
I WILL attend my Weight Watchers meeting this week, but there is NO way I will get on that scale.
