Giant Ginger Cookies II

All I can say about these cookies is that they are completely and totally DELICIOUS.  I was going to a friend’s house for the weekend and thought these would be the perfect seasonal, spicy cookies to go along with a hot cup of coffee or a steaming cup of tea.  (or to munch on during the 4-hour car ride)

The recipe is from the Better Homes and Gardens “All Time Favorite Christmas Cookies” collection, and they do NOT disappoint.  The BH&G recipe calls for “1 1/2 cups shortening”.  I used 2 sticks of butter and 1/2 cup Crisco shortening, and they turned out great…slightly crispy on the outside, and soft and yummy on the inside.  And such beautiful crackle!

If you like spicy, molasses-type cookies, you absolutely have to give these a try.  If I were to include these on my Christmas cookie tray, they would have to be much smaller.  But…I really do like them better than my original recipe, so they are officially my new go-to Giant Ginger Cookie.

    • Are you referring to the cellophane bags that the cookies are packaged in? If you are, I purchase them in bulk from, an on-line resource for all kinds of boxes and wrappings. Hope this helps!
