Fresh cranberries are such a seasonal treat, and there is almost no better way to celebrate their arrival than to bake up a deliciously moist batch of cranberry squares!
2 cups whole cranberries
1/2 cup sugar
1/2 cup chopped pecans
Mix together and spread on the bottom of a 13″ x 9″ greased pan.
In a separate bowl, mix together:
2 sticks margarine, melted and cooled
1 stick butter, melted and cooled
4 beaten eggs
2 cups sugar
2 cups flour
1 teaspoon vanilla
Pour this mixture over the cranberries and bake for 1 hour at 325 degrees, or until top is golden and toothpick inserted comes out clean. When cooled, cut into 3 1/2″ squares, remove from pan, and sprinkle with a light dusting of powdered sugar.
