I was trying to make this Chocolate Caramel Tart I had once eaten at Marlow & Sons :
I’ve made it before using this adaptation of the recipe by Lottie + Doof, and while it is really awesome, it requires a lot of time and energy. I didn’t really have either, or even the right ingredients (three grocery shops within one block of my apartment and none had creme fraiche…), so I made some adaptations of my own.
Much faster to make than a chocolate tart shell: a cookie crust.
Much easier than making caramel: buying ice cream. (I used two pints of Sea Salt Caramel Gelato by Talenti)
Much less pretentious than a fancy sea salt: pretzels.
What I came up with is sort of the “drag” version of that fancy Chocolate Caramel Tart; a campy imitation intended as an homage to the original that is just as awesome, but for different reasons. So even though I failed at making what I set out to make, what I did make was a perfect dessert to serve at a Monday night gathering to watch the premiere of RuPaul’s Drag Race All-Stars, and one that I will definitely be making again. Everyone loved it. In every episode, RuPaul tells the girls, “don’t f*&! it up!” but I think the lesson here is that if you do f*&! it up, you just have to come up with something more awesome to replace it with, and it will be fine.
